Ingredients:
- 10 large mushrooms
- 1/2 cup cooked quinoa
- 1/4 cup chopped onion
- 1/4 cup diced bell pepper
- 1/4 cup diced tomato
- 2 cloves garlic, minced
- 2 tablespoons nutritional yeast
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Preheat oven to 375F 190C
Clean mushrooms and remove stems, setting aside caps
In a skillet, heat olive oil over medium heat
Saut onion, bell pepper, tomato, and garlic until softened
Add cooked quinoa, nutritional yeast, soy sauce, salt, and pepper to the skillet
Stir well to combine
Stuff each mushroom cap with the quinoa mixture, packing it in tightly
Place stuffed mushrooms on a baking sheet lined with parchment paper
Bake in the preheated oven for 8-10 minutes, or until mushrooms are tender
Garnish with fresh parsley before serving
