Ingredients:
- 1 lb ground chicken
- 1/4 cup almond flour
- 1/4 cup grated parmesan cheese
- 1 large egg
- 1/4 cup buffalo sauce
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 1/4 cup keto-friendly ranch dressing for dipping, optional
- Chopped fresh parsley for garnish optional
Instructions:
Warm your oven up to 400F 200C and put parchment paper on a baking sheet
Grate the Parmesan cheese, add the egg, buffalo sauce, garlic powder, onion powder, salt, and pepper to a large bowl, and mix the chicken, almond flour, and cheese until everything is well mixed
Make meatballs out of the mixture that are about an inch across, and then put them on the baking sheet that has been prepared
After the oven is hot, bake the meatballs for 15 to 20 minutes, or until they are fully cooked and have a light brown color
Take them out of the oven when they're done and let them cool down a bit
If you want, you can serve it with keto-friendly ranch dressing for dipping and top it off with chopped fresh parsley
